Opening of the first Liquorice shop, kadó, in Germany


Salmiak (ammonium chloride) is a rock salt. It is industrially produced for the food industry, a white sour-salty tasting fine granulate. A maximum of 7.99 percent salt is permitted in the recipe, this must be labelled as "Extra strong adult liquorice - not children's liquorice".And this is how it happened: we wanted to free LiquoriceLiquorice is a natural plant product of the liquorice root. Its black colour comes from the vegetable carbon dissolved in the cooking process. Pure liquorice tastes sweet-tart, bitter. The consistency is hard as candy., known since ancient times, from its image as another sweet for children.
Europe made it possible! We researched from Iceland to Sicily and set off in search of the country's typical Liquorice. Salt Liquorice, Liquorice with salmiak, the original coconut Liquorice from England, the French Liquorice manufacturers with their family recipes. 
The car smelled of Liquorice with aniseed, honey, elderberry and vanilla. In Italy, we tasted Liquorice liqueur, Liquorice grappa and how Liquorice is used as a SpiceThe salmiak pastille is the best-known salt lozenge in Germany. The small lozenges combine the smoothness for the throat of natural licorice with the anti-inflammatory effect of salmiak salt., for example in cooking. I thought I knew quite a bit about Liquorice, but this variety surprised me and made me want to showcase it in a special Liquorice shop. That's how kadó, Germany's first Liquorice shop, came about. Founded in 1997 in Berlin Kreuzberg out of a passion for Liquorice. 

Since then, there has been only one product: Liquorice. But this comes in 600 varieties, ALL of which taste different.
kadó means gift, and hopefully the shop will soon be just that for Liquorice lovers...
